Lusa - Business News - Portugal: Regenerative tourism, fighting food waste in the interior - report

Coimbra, Portugal,Nov.19,2023(Lusa)- A regenerative tourism unit and an initiative to combat food waste are two examples of environmental sustainability in the centre of the country, where innovation is combined with the territory and the development of business ideas.
Chão do Rio, an eight-hectare farm in the village of Travancinha, at the foot of and overlooking the Serra da Estrela, is in the municipality of Seia. If it weren't for the typical twisty mountain roads, the border with the district of Coimbra would be just over a kilometre away and the border with Viseu would be seven.
It is in this ancient territory, where ancient rocks and traces of a Roman road stand out, and from where the view reaches the Caramulo mountain range to the northwest, from a distance and on clearer days, that the couple Catarina and Rodolfo dreamed up, and realised, a tourism project that makes respect for natural values its design.
"Our main concern was not to harm what we had here and, on the contrary, to ensure that our project helped to make the area a little better. Today, there's a lot of talk about regenerative tourism, and that's the logic behind it," Catarina Vieira told Lusa.
Chão do Rio aims to be "more than an accommodation unit" but rather a space "that allows people to feel the territory, to feel an experience more linked to pastoral culture, which is a culture that has a lot to teach, essentially how to live in connection and in harmony with nature", she said.
It all started with the property's meadow, which is tended and cared for. "At Chão do Rio, there are no gardens. We don't have a garden that was created to be beautiful. We have a meadow, it was already here, it's still here, and people can walk around freely. It's not a unit with a more sophisticated concept. We don't want anything like that. What matters to us here is that people feel good naturally. It's an extremely simple concept," she remarked.
A stone's throw from a small oak grove, there is a chicken coop that provides fresh eggs, and a vegetable garden, also with pedagogical functions - very much aimed at those who, coming from the big city, are looking to get to know the countryside - designed for use by children and their families, who can harvest lettuces, cabbages or tomatoes, among other products, depending on the time of year.
In fact, those who arrive are given a small blue bucket in which adults and children can collect leftovers from food preparation and use them to feed the farm animals, the donkey Luar and the sheep Mel and Amora.
There's also a biological swimming pool, where bathers can coexist with birds, plants and small amphibious animals since, in Chão do Rio's concept, "there would be no point in a conventional swimming pool".
"What we want, once again, is to improve, not harm. A biological pool is a centre of biodiversity, as well as being a place where you can bathe. It also plays a role in the ecosystem," Catarina Vieira said.
The five houses that stand at the entrance to the space - joined by two larger ones, one in double format, which allows larger families - and which have a vegetation cover over the roofs, are a kind of "brand image" of the holiday village.
"They are nothing more than a tribute to the pastoral culture, and there too, we have the concept of the circular economy. In a fire-prone area, we use broom to decorate the roofs and also provide thermal insulation for the houses. We go to the fields and harvest the broom and thus clean up the land, not least because the roofs have to be changed periodically," she explained.
This task is carried out by Henrique, Emília's husband, and two of Chão do Rio's eight employees, six of whom are from the village of Travancinha. Catarina Vieira described Henrique as a "true public relations officer" for the tourist resort, who contacts the owners of the surrounding land, and his neighbours so that he can carry out his duties.
Moreover, everyone there is addressed by their first name - a reflection of the "genuineness" and "authenticity" with which the people of Travancinha welcome visitors, many of whom, including the staff, are already part of the Chão do Rio "family".
In Castelo Branco, the Fórum shopping centre has teamed up with Xico's, a delivery company from Covilhã, to combat food waste in restaurants by offering to deliver meals and food products to customers' homes that would otherwise go unsold.
"This challenge was born out of an internal concern about food waste, particularly at the end of the day," Nuno Costa, director of Fórum Castelo Branco, told Lusa.
The initial idea was for employees and shopkeepers, many of whom leave work late, to be able to access leftovers from the restaurants located there. As the Forum didn't have a technological or billing solution to do this, it found the ideal partner in Xico's.
The project, which will be launched at the beginning of December, will start with five restaurants, all in the shopping centre.
"What we're going to do is a project that combats food waste through sales at prices that are much more affordable than the original value of the products but with end-of-day quality. Customers can either buy for collection at the restaurant or for home delivery, which is one of the advantages we have over other existing services," explained João Rodolfo, Xico's manager.
There will be different offers available to those interested, all resulting from leftovers: "If the customer orders, it's because the product has been made available and exists, and they can choose between different ranges, with different prices," he said.
Called "Indatábom", the project offers "totally random products, available in a % surprise box, which will have an extremely low price", a box with an indication of what it contains, also at a modest price, but higher than the previous one, or side dishes, soups and desserts.
All of this will be operationalised via a mobile phone app and Xico's website, which, if the project succeeds, plans to extend it to other restaurants in other locations, as it currently works with more than 500 partners in 14 locations.
"Initially, there will be five [restaurants] and, who knows, in the future, we may have a complete expansion to the more than 500 partners we already have," João Rodolfo said.
